The Cooperativa Andaluza Ganadera (Andalusian Stockbreeding Cooperative), better known by their acronym COVAP, works in the beautiful Pedroches Valley, a privileged natural environment which was well-known and appreciated by the ancient arabic settlers of the area: its name was Fahs al Ballut, which means Valley of the Acorn Trees. Among the protected spaces in this wonderful green area many traditional and non-agressive activities are still practiced, such as black leg pig breeding in the Free-ranges of Pedroches Valley.
The Andalusian Stockbreeding Cooperative is a source of work and the promoter of many protective policies for the unique granite environment of the Pedroches Valley. Their cold cuts and Spanish Ham production is renowned worldwide because of its quality, which they guarantee by employing world experts in the field as well as families with ancestral knowledge about pig breeding and how to cure the very best Spanish Ham.
